A demanding vinification

Technical commissions make numerous visits to the vineyards throughout the year. The vinification process is followed closely by two full-time oenologists. An “expert wine-tasting” jury controls the vinification and selects the wines that will be presented under the Côtes du Brulhois appellation. The will of the Vignerons, the choice of the grape varieties and the quality of the terroir all work together to give a meaty wine with a beautiful, strong, deep ruby red colour, and a bouquet of ripe red fruits, candied fruit, prunes, leather and toasted bread. The most promising blends will be barrel aged in the purest of tradition. The rosé wines, lively and well-rounded, develop the delicate and pleasant aromas of small red fruits.
