APPELLATION : Côtes du Brulhois
 
SOIL : Slopes and plains of gravel and clay
 
GRAPE VARIETIES :
 
Merlot 35 %, Cabernet Franc 35 %, Tannat 30 %
 
SURFACE AREA : 20 hectares
 
VINIFICATION : traditional at 28-30°C
 
MACERATION : 25 to 35 days
 
AGEING : In vats
 

TASTING NOTES :
 
A deep purple colour with a ruby disc. A full and complex bouquet full of ripe black berries, prunes, fresh mint, leather, liquorice, violets, truffle and black pepper. A solid and well-structured wine with good solid tannins, remarkable freshness and abundant fruit bringing smoothness and roundness. A harmonious wine which is both expressive and long lasting in the mouth. 
 
SERVING SUGGESTION :
 
Serve at 16°C, an hour after decanting, with truffles, confit de canard, roast partridge, wild boar, wild mushrooms…
 
CELLAR AGEING :
6 to 8 years
